Last week I found his guacamole recipe on Emergen-C's facebook page.
It gave me an idea, because I think lime is a pretty good addition to this soup but I didn't have any, or the truck, and didn't want to go over on our grocery budget any ways!
So I chopped up an onion, three tomatoes, two cloves of garlic, and two corn tortillas I toasted until they were hard. I boiled the onion, tomatoes and garlic in three cups of water, then added the Emergen-C packet and 1 tsp of chili powder. Top with cheese, sour cream, tortillas.
It would of course taste better with real lime juice, but if I had to use Emergen-C again, I'd only use half a packet.
It tasted nothing like my favorite tortilla soup and really needed some cilantro, but it was still alright.
My favorite tortilla soup (La Parrilla Suiza in Phoenix, Arizona) is pretty red, as I recall. Any tips?

ReplyDeleteI certainly wouldn't have either. They had parfait and all kinds of other recipes up too, but none of them seemed all that appealing in all honesty. I didn't really think the guac did either, but it was worth trying once.
